Breakfast toast is one of the easiest things I make, and one of the most requested. These are the five versions I actually put together, no fillers, no invented combinations — just what goes on the bread in my own kitchen.
The Base I Start With
Most of these begin the same way: toast bread topped with a layer of soft cheese and a drizzle of olive oil. From there, everything else builds on top. A couple of the toasts below break from that base entirely, and I’ll point those out as we go.
5 Breakfast Toast Ideas I Actually Make
1. Egg Toast
Toast bread with soft cheese and olive oil, a slice of tomato if you like it, a warm egg, chopped black and green olives, and chopped fresh coriander leaves on top. Finish with a little salt, black pepper, and cumin.
The cumin isn’t just for flavor — Cleveland Clinic notes that this small, warm spice brings real antioxidants along with its earthy taste, and coriander carries its own health benefits too, from antioxidants to heart support.
2. Cheese and Charcuterie Toast
Toast bread with soft cheese and olive oil, then layered with cheese slices, charcuterie slices, more grated cheese, chopped black and green olives, and a touch of rosemary.
Rosemary is one of those herbs that does more than smell good on the plate — research points to real antioxidant and anti-inflammatory properties behind that sharp, woodsy flavor.
3. Butter and Jam Toast
The simplest of the five. Toast bread with butter, your favorite jam, and square slices of cheese on top. No olive oil base here, just butter doing the work. Sweet, familiar, and the one most kids ask for.
4. Vegetable Toast
Toast bread with soft cheese, cucumber slices, tomato slices, and avocado slices, finished with a little salt and black pepper, a few raisins for sweetness, and grated cheese on top.
Avocado adds real fiber and heart-healthy fats to this one, and the raisins bring a small, natural sweetness that plays well against the savory vegetables underneath.
5. Corned Beef Toast
This one skips the soft cheese base entirely. Toast bread with tomato sauce, grated cheese, pieces of corned beef, and more grated cheese on top. Warm, savory, and closer to a mini pizza than a traditional toast.
Why These Five Stay on My List
What I like about this breakfast toast lineup is that it covers every mood. Egg toast for something balanced, cheese and charcuterie for something rich, butter and jam for something simple and sweet, vegetable toast for something lighter, and corned beef toast for something heartier.
None of these took months to develop. They came together the way most of my recipes do — a little trial, a little instinct, and adjustments based on what actually tastes right on the plate.
It also pairs naturally with what’s already on the table — a plate like this sits comfortably next to the Moroccan breakfast spread I’ve written about before, with olives, cheese, and coffee close by. Someone could easily order the vegetable toast alongside a coffee, while someone else at the same table goes for the richer charcuterie version, and both leave the table happy.
Try Them at Home
Pick whichever one matches your morning. Some days call for something quick, like butter and jam. Other days call for something that actually holds you over, like the egg or corned beef versions.
None of these need special equipment or hard-to-find ingredients. That’s part of the point — good breakfast toast shouldn’t require a trip to three different stores. A few staples from the fridge, a toaster, and a little attention to how you layer things is really all it takes.
If you make one of these, or put your own spin on it, I’d love to hear how it turned out.
