This lime juice recipe is one of the drinks I prepare by hand. It’s built on green lime, fresh orange juice, a little pineapple, carrot and a small piece of ginger, and the result tastes fresh and citrusy without being sharp.
There’s no complicated secret behind it. What makes it work is the balance between the ingredients and a few small preparation habits I’ll walk you through below.
What Makes This Lime Juice Different
Most people imagine lime juice as water, sugar and a few drops of lime. This version is a blend of fruit and vegetables, and each ingredient has a job:
- Green lime brings the acidity and freshness.
- Orange adds a softer citrus flavor that rounds off the lime.
- Pineapple adds natural sweetness and fruit flavor.
- Carrot contributes to the texture and the overall flavor of the drink.
- Ginger adds a subtle extra note, as long as you use it sparingly.
None of them should dominate. The flavor depends on how they balance each other.
I also use the lime with its peel. I wash it thoroughly, cut off the top and bottom ends, and keep the rest of the peel on. I think that’s part of why the lime flavor comes through so clearly. The seeds, on the other hand, I try to remove, because they can add bitterness.
Lime Juice Ingredients
These are my working quantities for one glass:
- A small cup of fresh orange juice
- One green lime
- A small piece of pineapple
- Half a carrot
- A small piece of fresh ginger
- Ice cubes
- Water
- Sugar, to taste
If you’re making more than one glass, scale the ingredients up in the same proportions.
I keep the pineapple and ginger to small pieces on purpose. They’re there to add flavor, not to take over. Ginger especially: too much can make the drink taste too spicy or bitter.
How I Make Lime Juice
- Start with the orange juice. Pour the fresh orange juice into the blender.
- Wash the lime. Wash the green lime thoroughly.
- Trim the ends. Cut off the top and bottom of the lime, but keep the rest of the peel.
- Cut and clean. Cut the lime into pieces and remove as many seeds as you can.
- Add everything to the blender. Add the lime pieces, the small piece of pineapple, half a carrot, the ice, the water and the small piece of ginger.
- Blend everything together.
- Strain right away. Strain the juice immediately after blending to remove the pulp and fibers. This leaves a smoother liquid.
- Serve cold.
- Sweeten to taste. I let the customer decide how much sugar to add. Some like it tart, some prefer it sweeter.
Why I Like Serving This Lime Juice
What I like most about this drink is that it doesn’t taste like a standard juice. It’s fresh, made by hand, and the combination is a little unexpected: lime with its peel, orange, pineapple, carrot and a hint of ginger. Some customers are surprised by it the first time they try it, and some come back to order it again.
If you want to try something similar, start with the quantities above, taste it, and adjust the sugar. If you like refreshing drinks, you might also enjoy my pomegranate mocktail.
The part I’d keep exactly as it is: just enough ginger to add flavor without overpowering the lime and fruit, and straining the juice immediately after blending.
